Zesty Lemon-Chicken Salad Sandwiches

Good for a summer light dish made zesty with lemon
1/3 cup mayonnaise
3 Tbsp. finely chopped red onion
3 Tbsp. finely chopped celery
1 tsp. finely shredded lemon peel
2 tsp. fresh lemon juice
2 cups chopped, cooked chicken (reserved from No-Fuss Snack Mix Chicken, bones removed if present)
8 slices wheat bread, toasted if desired
Romaine lettuce leaves, arugula or lettuce
8 thin tomato slices, about 1 medium tomato
1. In medium bowl stir together mayonnaise, onion, celery, lemon peel, and lemon juice. Add chopped chicken, stir to coat; set aside.
2. Arrange lettuce leaves on 4 bread slices; top with tomato slices. Spoon chicken mixture on tomatoes; top with remaining bread slices. Serve immediately or wrap with plastic wrap and refrigerate up to 6 hours. Makes 4 servings.
3. TEST KITCHEN TIP: Serve this sandwich on multi-grain breads or hearty rolls.
