Turkey Sausage Wraps

Good Healthy sausage wraps


3 tablespoons mayonnaise
3 tablespoons coarsely ground mustard
1-1/2 pounds turkey sausage
3 tablespoons olive oil, divided
2 medium sweet onions, cut into 1/2-inch-thick slices
4 medium tomatoes, cut into 1/2-inch-thick slices
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
4 to 6 burrito-size (10-inch) flour tortillas
6 to 8 red leaf lettuce leaves


1. Heat grill. In a small bowl, combine mayonnaise and mustard. Refrigerate until ready to use.

2. Brush sausages with 1 tablespoon olive oil. Place on grill, cover, and cook 10 minutes, turning occasionally. Uncover and move sausages to one side of grill.

3. Brush onions and tomatoes with remaining olive oil and sprinkle with salt and pepper. Carefully add onions to the grill and cook along with sausages, turning both onions and sausages occasionally until sausages are no longer pink in the middle, 8 to 10 minutes more. During the last 3 to 4 minutes of grilling time add tomatoes, turning once halfway through. Transfer onions and tomatoes to a platter and sausages to a cutting board. When sausages are cool enough to handle, cut them diagonally into 1/2-inch-thick slices. To assemble wraps, spread 1 tablespoon mayonnaise-mustard mixture in the center of each tortilla. Place one or two lettuce leaves over mayonnaise and divide sausage slices, onions, and tomatoes evenly over top of lettuce leaves. Fold one side of each tortilla tightly around filling and roll up; cut in half diagonally. Makes 4 to 6 servings.
