Oriental Salmon and Vegetable Stir Fry

DESCRIPTION:

Healthy Salmon Stir Fry

INGREDIENTS:

115g (4oz) broccoli, cut into small florets
115g (4oz) cauliflower, cut into small florets
55g (2oz) baby sweetcorn
55g (2oz) mangetout
2 tablespoons soy sauce
2 tablespoons water
15g (˝oz) brown sugar
1 tablespoon sunflower or vegetable oil
450g (1lb) skinless salmon fillets, cut into strips 1cm (˝in) thick

DIRECTIONS:

Prepare all the vegetables as appropriate. Make sure the broccoli and cauliflower are cut into small florets so that they cook quickly. Mix the soy sauce, water and sugar in a bowl, and put to one side.

In a large frying pan or wok, heat the oil over a high heat. Add the broccoli and cauliflower and stir-fry, keeping them moving around the pan all the time. Add the sweetcorn and mangetout and cook for 4-5 minutes. Add the thin strips of salmon with the soy sauce mixture and stir-fry for 4-5 minutes until piping hot. Serve straight away.
