
Easy Vegetable Rice Medley

DESCRIPTION:
Fast and easy Vegetarian dish used as a main dish or side dish
INGREDIENTS:
1 Tbsp. canola oil
1 each:
onion, carrot and stalk celery, chopped
1/2 of a red pepper, chopped
1-1/2 cups chicken broth
1-1/2 cups MINUTE RICE Brand Rice, uncooked
1 cup frozen peas
DIRECTIONS:
HEAT oil in skillet. Add onion, carrot, celery and pepper; cook 5 min. or until tender.
ADD broth; bring to boil.
STIR rice and peas; cover. Simmer 5 min. Remove from heat. Let stand 5 min. before serving.
